Bruschetta with Mozzarella
- 4 Tbsp Olive oil
- 1 Tbsp Basil, fresh, chopped
- 2 Red pepper, quartered
- 4 Bread slice, thick
- 2 Garlic clove
- 1 Tomato, large
- 100 g Mozzarella
- Salt and pepper
- Basil
Serves 4 Skin and mash the tomato. Slice the cheese. Mix together the oil (virgin if possible), basil, salt and pepper. Then put the mixture in the fridge, to chill for 10 minutes. Meanwhile: put the pepper quarters under the grill and cook for 5 minutes on each side or until the flesh is soft and the skin charred. Then peel off the skin and thinly slice the flesh. Lightly toast the bread, then rub it all over with the garlic cloves. Spread each slice with a little of the mashed tomato and drizzle over the basil and oil mixture. Top with the peppers and mozzarella and grill for 3 minutes or until the cheese is melted and golden. Garnish with the basil leaves and shredded basil and serve.
