Cherry Lime Scones
- 2 1/2 cups flour
- 2 tablespoons plus 2 teaspoons brown sugar
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1/4 cup oil
- 1/2 cup plus 1 teaspoon milk
- 1 egg
- 11/2 teaspoons lime zest
- 11/2 teaspoons grated lemon zest
- 3/4 cup dried sour cherries, coarsely chopped
Whisk together flour, 2 tablespoons sugar, baking powder and salt. Quickly stir in oil with fork until pea-sized crumbs form. Combine 1/2 cup milk, egg, zests and cherries. Add to flour and stir until blended. Gather dough into a ball; knead 30 seconds. Pat into 81/2-inch diameter baking dish. It will be about 3/4 inches thick. Brush with remaining milk; sprinkle with 2 teaspoons sugar. Cut 12 wedges. Bake at 425 for 20-25 minutes.
