Chocolate Nut Zucchini Cake

  1. 3 cups all purpose flour
  2. 1-1/2 Tbsp. baking powder
  3. 1 Tbsp. baking soda
  4. 1 Tbsp. salt
  5. 4 eggs
  6. 3 cups granulated sugar
  7. (3 ounces) squares chocolate (melted and cooled)
  8. 1-1/2 cup salad oil
  9. 3 cups grated zucchini
  10. 1 cup walnuts (finely chopped)

Grease and flour 10" tube pan. Sift together first 4 ingredients and set aside. Beat eggs until thick. Gradually add sugar, 1/4 cup at a time. Add oil and melted chocolate to the egg mixture. Gradually blend in dry ingredients. After your dry ingredients are well blended, add the zucchini and nuts and use wooden spoon till well blended. Bake: 350� for 1 hour and 15 minutes. Note: This is a very thick mixture, so if you decide to use a hand mixer instead of blending zucchini and nuts with a wooden spoon, please be careful not to burn your mixer out.
