Cake ingredients:

  1. 1 box yellow cake mix ( I use French Vanilla)
  2. 2 eggs
  3. 1/4 cup oil
  4. 1/2 tsp almond extract
  5. 1/2 cup water

Mix all ingredients until well blended. Bake in 13X9 baking dish. Cool and cut into 2 inch slices.

Icing ingredients:

  1. 16 oz cream cheese, softened
  2. 2 1/2 cup heavy cream
  3. 1 cup powdered sugar
  4. 4 tsp rum extract
  5. 1 tsp vanilla
  6. sweetened cocoa for top (I use hot cocoa mix)

Place cream cheese in a fairly large bowl. With mixer, beat until soft and creamy. Add powdered sugar and mix well. Add remaining ingredients except for sweetened cocoa and beat until fluffy. Putting it together: Place a layer of cake in bottom of a serving bowl and top with 1/3 of the icing and repeat until all is gone. Sprinkle the top with sweetened cocoa.
