Fruit Cocktail Cake
- 2 eggs
- 1 3/4 cup sugar, divided
- 2 cups fruit cocktail, undrained
- 2 cups flour 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 cup brown sugar
- 1/2 cup chopped nuts
- 1/2 teaspoon cinnamon
- 1/2 cup butter (1/4 lb.)
- 2/3 cup milk
- 1 cup coconut
Beat eggs, add 1 cup sugar, add fruit cocktail, juice and all. Stir in flour, baking soda, and salt. Pour into a greased and floured 9×13 pan. Set aside. In small bowl combine brown sugar, nuts and cinnamon. Sprinkle this over the batter and bake 325� 30 to 40 minutes or till done. While cake bakes, combine butter, milk, and remaining 3/4 cup sugar in pan, bring to a boil and cook 5 minutes. Stir constsntly. After it thickens, remove from heat and add coconut. Spread on cake while it is coolig. Let set 10 minutes.
