Grilled Chicken Calapan
- 1 whole chicken, quartered
- 3/4 cup soy sauce
- 3/4 cup coconut vinegar
- 2 tsp grated ginger
- 2 Tbsp garlic, crushed
- 1 Tbsp fresh basil, chopped
- juice of 3 calamansi (Citrfortunella microcarpa)
- 1 tsp salt
wash chicken thoroughly and drain completely. rub chicken with salt and calamansi juice. add remaining ingredients and rub chicken for at least 10 minutes. cover with plastic wrap and place in chiller to marinate for at least 2 hours. discard marinade and grill chicken over hot charcoal for at least 10 minutes each side.
