Honeyed Chicken

  1. 5 Tbsp red wine
  2. 1 Tbsp soy sauce
  3. 2 Tbsp olive oil
  4. 3 Tbsp honey
  5. 2 Tbsp hoisin sauce
  6. 2 tsp root ginger, finely chopped
  7. 8 item chicken thigh
  8. flat-leaved parsley
  9. potato and grape salad

Put the red wine, soy sauce, olive oil, honey, hoisin sauce and ginger in a large shallow dish. Mix together thoroughly.

Trim any fat off the chicken and make 3 cuts in the skin of each thigh. Put the chicken into the marinade, turning it so the pieces are well coated. Cover and put in the fridge for 10 minutes to marinate.

Remove the chicken thighs from the marinade and cook on a barbecue or grill for 15 minutes, turning and brushing them frequently with the marinade, until the skin browns and crisps and the meat is cooked. Garnish with the flat-leaved parsley and serve with the potato and grape salad.
