Hot or Cold Chicken Salad

  1. 8 oz chicken
  2. 3-4 Tbsp mayonnaise
  3. 1 cup shredded Cheddar cheese
  4. 1 Tbsp Dijon mustard
  5. 1 Tbsp ea chopped: onion, red pepper, parsley
  6. 4 slices bacon, cooked crisp, crumbled

Mix all ingredients together. Place in refrigerator to cool or bake at 350 for 20 minutes until hot and bubbly. (Serves 2 @ 3 carbs)
