Kiwi Fruit Jam
- 41/2 cups kiwifruit, crushed
- 1 box powdered pectin
- 7 cups sugar
Heat kiwi 3 minutes. Add pectin and mix well. Place over high heat to a hard boil. Add sugar all at once. Bring to a full rolling boil. Boil hard 1 minute. Skim off foam. Pour into sterilized jars. Variations: add 2 ounces finely minced ginger, or add 1/4 cup rum after removing from heat. Makes 8 cups. This tasted good but was a khaki color.
