Mega-Healthy Tasty Curry / Tagine
(only organic produce unless its unavailable)
in a le creuset pot…
- translucentise 2-3 onions in 2-3 Tbsps of best olive oil
- add 2-3 chunkily cut carrots and 3 stalks of celery
- add very good pinch of salt, cover, reduce heat, let sweat for a few mins

- add half bulb of roughly chopped garlic, remove lid, cook off whilst you..
- add 1 tsp cumin, 2 tsp tumeric, 1/2 tsp ground corriander, 1/2 tsp
- cayenne, 1/2 tsp ground cinnamon, 1/2 tsp
stock which of course is superior, but takes time cook off and let it stick, but not burn, as it sticks add the juice add 2/3 of a litre of boiling water water, and another pinch of salt and a pepper grind stick lid on bring to boil, add 3 new potatoes skin on, chunky add 2 best chicken breasts (boned thighs work wonderfully) add two chopped fresh chillies and two thumbs of fresh ginger boil for 10 mins add tin of tomatoes, bring to aggressive boil turn down heat, add less hardy veg (peppers, sweet potato, mushrooms) low simmer for 20 mins add pound (tin) of chickpeas (rinsed) turn off heat, let stand for 10 mins add a lot (half of a big bunch more or less or nearly there) of fresh corriander
