Peri-Peri Peanut Muffins
- This delicious West African bread contains both chile and peanuts and is
- baked
- in muffin tins. The
- muffins freeze well are particularly good when they are served warm.
- 1/2 cup butter
- 1/2 teaspoon salt
- 1 teaspoon peri-peri powder, or substitute cayenne
- 1/4 cup sugar
- 2 eggs, lightly beaten
- 1/2 cup milk
- 1 teaspoon baking powder
- 1 1/2 cups all purpose flour
- 3/4 cup finely chopped unsalted, roasted peanuts
Preheat the oven to 400 degrees F. Cream the butter, salt, chile powder, and sugar until the mixture is light; mix in the eggs and milk. Sift the baking powder and the flour together. Add this mixture to the creamed mixture and stir until the ingredients are blended. Stir in 1/2 cup of the peanuts. Fill the greased muffin tins about 1/3 full and sprinkle the tops of the muffins with remaining peanuts. Bake at 400 degrees F for 12 minutes. Serve the muffins hot with honey drizzled over the top.
