Scrambled Egg Burritos

  1. nonstick cooking spray
  2. 1 red bell pepper, chopped
  3. 5 green onions, sliced
  4. 1/2 t. red pepper flakes
  5. 5 eggs, beaten
  6. 1 Tbsp. chopped fresh cilantro or parsley
  7. 4 (8") flour tortillas
  8. 1/2 cup (2 oz.) shredded low sodium, reduced ft Monterey Jack cheese
  9. 1/2 cup salsa

Spray med. nonstick skillet with cooking spray. Heat over med. heat. Add bell pepper, green onions and red pepper flakes. Cook and stir 3 min. Add eggs to vegetables. Reduce heat to low. Cook and stir 3 in. or until set. Sprinkle with cilantro. Stack tortillas and wrap in paper towels. Microwave at high 1 min. or until hot. Place 1/4 of egg mixture on each tortilla. Sprinkle with cheese. Fold sides over to enclose filling. Serve with salsa. Makes 4 servings.
