Tuscan Tuna and Bean Salad

  1. 3 1/2 cup cooked small white beans
  2. 2 chopped tomatoes
  3. 6 1/8 oz canned tuna well drained
  4. 3 Tbsp fresh lemon juice
  5. 3 Tbsp wine vinegar
  6. 2 Tbsp olive oil
  7. 3 Tbsp fresh basil chopped or parsley
  8. 1 clove garlic crushed
  9. 2 scallions chopped
  10. 1/4 tsp salt
  11. 1/4 tsp black pepper

In a medium bowl, combine cooked small white beans, chopped tomatoes, well-drained solid white tuna, fresh lemon juice and wine vinegar, olive oil, chopped fresh basil or parsley, garlic clove, crushed through a press, chopped scallions, and salt and freshly ground pepper. Toss gently to mix. Serve at room temperature or slightly chilled.
