Ranchero Burrito

  1. 3 eggs
  2. 4 Tbsp. Chorizo Sausage
  3. 2 Tbsp. Scallions
  4. Hand full of Jack Cheese
  5. 1 12" Flour Tortilla
  6. Your favorite red salsa

In a small frying pan cook chorizo sausage all the way through. Then add the three eggs and scallions. While this is cooking, heat up your flour tortilla, add jack cheese on top. Heat tortilla until cheese is melted then put on a big plate. When your egg mixture is scrambled to your liking, plop it onto your burrito and fold appropiately. Top the burrito with your favorite red salsa. Garnish with sliced tomatoes.
