Fat Tuesday Noodles With Smoked Sausage and Shrimp

  1. 1/2 cup chopped onion
  2. 1/2 cup chopped celery
  3. 1/2 cup chopped green pepper
  4. 1 Tbs. Olive oil
  5. 1 1/2 tsp. Italian Seasoning
  6. 1/2 tsp. Crushed red pepper
  7. 1/2 tsp. Coarse ground black pepper
  8. 1/2 lb. Smoked or Andouille sausage
  9. 1/2 lb. Large shrimp, peeled and deveined
  10. 32 oz. Chicken broth
  11. 8 oz. Angel hair pasta, uncooked

Saute onion, celery, and pepper in olive oil in a large skillet over medium high heat. Stir in Italian seasoning and red and black pepper. Cut sausage in half lengthwise, then in 1/2 inch slices. Add sausage and shrimp to skillet. Cook 2 minutes or until shrimp begin to turn pink. Add chicken broth. Bring to a boil. Break pasta in half; add to skillet. Cook 3-5 minutes, or until pasta is just done.
