- 1 cup water
- 1/4 cup sugar
- 1 tablespoon dark rum
- 1/4 teaspoon grated lime zest
- 1 kiwi, quartered lengthwise, in 1/4-inch slices
- 1 small banana, in 1/4-inch slices
- Vanilla ice cream
Simmer water with sugar, rum and zest 5 minutes. Add kiwi and simmer 2 minutes. Add banana and simmer 30 seconds. Transfer fruit to bowl. Boil syrup until reduced to about 1/2 cup and stir fruit back in. Serve over ice cream. Serves 2.
