Kiwi Fruit Medley
- 6 slices fresh or canned pineapple, quartered
- 3 fresh peaches, peeled, sliced
- 4 kiwi fruit, peeled, sliced
- 1/2 cup raspberries or strawberries
- 1/2 cup dry wine (optional)
Combine fruits and wine. Serve with Custard Sauce. Serves 4-6.
Custard Sauce:
- 11/2 cups milk, scalded
- 1/3 cup sugar
- 2 tablespoons cornstarch
- 1/8 teaspoon salt
- 3 egg yolks, beaten
- 1 teaspoon vanilla
- 1 tablespoon Cointreau or undiluted
- orange juice concentrate
Mix sugar, cornstarch and salt. Pour in hot milk and stir until blended. Stir in double boiler over simmering water till thickened. Cook 2-3 minutes longer. Beat egg yolks till light and blend in hot sauce. Return to double boiler and cook 2-3 minutes over hot water. Remove from heat and stir in vanilla and Cointreau. Cool and chill.
