Mai Tai Compote

  1. 1 fresh pineapple
  2. 1 cup fresh strawberries, halved
  3. 1 orange, peeled, sliced
  4. 1/2 cup seedless red grapes
  5. 1 kiwi, peeled, sliced
  6. 1/4 cup or less lime juice
  7. 3 tablespoons honey
  8. 1 tablespoon light rum
  9. 1 tablespoon Grand Marnier
  10. 1 banana, sliced

Cut pineapple in half lengthwise, leaving leaves intact. Remove fruit in chunks, leaving 1/2-inch shells. Combine fruits in a bowl. Combine next four ingredients (adding shredded lime zest if desired). Stir and pour over fruit. Add banana and toss gently. Spoon into reserved pineapple shells. 6-8 servings. I used ready-cut fresh pineapple and served in a glass bowl. May add sugar, depending on tartness of fruits.
