Cut meat into cubes of 2.5cm(1 inch) Moisten tip end of bamboo skewers with water and thread on four or five cubes of meat. Sprinkle with salt and pepper. Grill over a charcoal fire or under the griller until meat is done. Serve hot with a sate sauce
Peanut Sate Sauce
- 1 onion, chopped
- 250g (1/2 lb) roasted peanuts
- 3-4 red chillies
- 1 clove garlic, crushed
- 1/2 cup water
- 1 teaspoon vinegar
- 1 tablespoon soy sauce
- 1 tablespoon coconut oil
- 1/2 teaspoon salt
Blend the onion, roasted peanuts, chillies and garlic together until they form a thick paste. Put water in a saucepan with vinegar, soy sauce and oil and allow to heat slowly. Stir in the peanut paste and cook for 10 minutes stirring all the time. Season with salt and allow to cool before serving. Note : Sauce should be thick and have a creamy consistency.
