Herbed Chicken With Sauteed Vegatables

  1. 6 boneless chicken breast
  2. basil
  3. 2 tablespoons parsley
  4. 2 tablespoons oregano
  5. 1 pinch salt
  6. pinch of pepper
  7. 1/4 teaspoon crushed red pepper flakes
  8. 1/4 teaspoon blackened seasoning
  9. 1 tablespoon minced garlic
  10. 1 can diced tomatoes
  11. 1 can mushrooms
  12. 1/2 green pepper sliced
  13. 1/2 yellow, orange or red pepper sliced
  14. 1/2 onion sliced
  15. 1/4 cup chicken broth
  16. 1/2 cup oil

Preheat oven to 375 degrees f. Wash chicken pat dry, in bowl combine basil,parsley,oregano,red pepper flakes, and blackened seasoning mix well. Place chicken on work surface rub both sides of chicken with herb rub. Season chicken all over with salt and pepper. Warm oil in large skillet over med. Heat. Place chicken in hot oil. Cook each side for 5 minutes. Transfer chicken to baking pan. Place chicken in oven for 25 min. In medium sauce pan add broth put on high heat,bring to boil add peppers and onions, boil for 5 min. Turn to medium heat add mushrooms, tomatoes and garlic cook for 7 min. Stirring occasionally. Remove chicken from oven. Spoon veggies over chicken and serve. Goes well with rice or pasta.
