12 Free range egg yolks
4 Tbsp Caster sugar
50 ml Marsala wine
50 ml Coffee liqueur
Amaretti biscuits, to
Decorate
Place the egg yolks and sugar into a large metal bowl. Whisk until thick and pale. Add the Marsala wine and coffee liqueur, whisking them in. Place the bowl over a pan of simmering water, taking care that the base of the bowl does not come into direct contact with the simmering water. Whisk the egg mixture constantly until the mixture turns to thick foam. Spoon at once into 4 wine glasses, decorate with Amaretti biscuits and serve at once.
