Stir Fry Lotus Tubers

  1. 1 lb lean sliced pork
  2. 3 cloves garlic mashed
  3. 3 slices fresh ginger root smashed
  4. 4 scallions cut up and bruised
  5. water to cover
  6. salt and white pepper to taste
  7. 4 Tbsp soy sauce (optional)
  8. 2 lbs peeled and sliced lotus root

Stir fry pork , garlic , ginger and scallions till pork is opaque in color, add the lotus root , and the water , and the rest of the ingriedents , Bring to a boil , and simmer untill lotus root is tender.
