Chicken Ala King

  1. 1 can cream of chicken soup, undiluted (low-fat)
  2. 3 Tbsp flour
  3. 14 tsp pepper
  4. dash of cayenne (red) pepper
  5. 1 lb boneless, skinless chicken breasts, cut into cubes
  6. 1 celery rib, chopped
  7. 1/2 cup chopped green pepper
  8. 1/4 cup chopped onion
  9. 1 (10-oz) pkg frozen peas, thawed
  10. 2 Tbsp diced pimento, drained (if desired)
  11. hot cooked rice

In a slow cooker, combine soup, flour, pepper and cayenne pepper until smooth. Stir in chicken, celery, green pepper and onion. Cover and cook on low for 7 to 8 hours until meat juices run clear. Stir in peas and pimento. Cook 30 minutes longer or until heated through. Serve over rice.
