- 2 Chicken gizzards
- 2 Chicken livers
- 4 cup Rice, cooked
- 1/4 cup Butter
- 1 bn Scallion; finely chopped
- 3 md Onion; finely chopped
- 1 cup Celery; finely chopped
- 1/2 cup Green pepper; finely chopped
- 1/4 cup Parsley; finely chopped
- 3 Garlic clove; finely chopped
- 1/2 lb Ground beef
- 1 pn Thyme
- Red pepper & salt; to taste
Cook gizzards until tender in a small amount of water, adding livers in last stages of cooking. Chop fine. Heat butter in saucepan. Add green onions, onions, celery, and green pepper. Cook slowly until soft. Add parsley, garlic, giblets, and ground meat. Cook slowly until all is thoroughly blended, about 20 minutes. Add thyme, salt, and pepper. mix with cooked rice, place in casserole and heat in a 200 C. (325 F.) oven 20 to 25 minutes or until ready to serve.
