Crockpot Weightwatcher's Soup

  1. 1 Head of Cabbage
  2. 1-1lb. bag of mixed vegetables
  3. 1 lg. can of tomato juice
  4. (ingredient amounts may be adjusted to fit crockpot.)

Break/chop cabbage into smaller pieces and fill crockpot. Add enough water to cover. Turn crockpot on low and leave overnight 8+/- hours until tender. Drain water. Add mixed vegetables and tomato juice. Add water if necessary to cover ingredients in pot. Continue to heat on low for about 1 hour to blend flavors.

Great with cornbread or crackers. Tasty for supper, and better the second day.
